Weekend Recipe: Vegetarian Chili

The New Year is upon us and a lot of people started to eat healthy. Swapping out one vegan or vegetarian meal a couple of times a week will make a huge difference in your weight loss goals. This is an easy recipe and it’s really filing.  It’s a great for these cold winter days. You will feel super cozy eating it. This does require some preparation.  You have to soak the beans the night before.  You could buy canned beans but it’s not as healthy.  Soaking the beans will also help you not bloat and they will make them easier to digest.  They will smell funny the next morning when you soak them that is just the gas that is released so don’t forget to drain that water and give them a good rinse before cooking them.  When you soak the beans you don’t have to put them in the refrigerator you can leave them on the counter.

You can enjoy this chili alone, with warm tortillas or with tortilla chips.

INGREDIENTS:

For the Chili:

1 tablespoon olive oil

1 large yellow onion, diced

3 cloves garlic, minced

1 1/3 dried white beans, soaked overnight then drain and rinsed

1  1/3 dried chickpeas, soaked overnight then drained and rinsed

 salsa verde you can buy it fresh at the market or a bottle of it

4 cups vegetable broth

1/2 teaspoon chili powder

1/4 teaspoon ground oregano

1/4 cup fresh chopped cilantro

1/2 teaspoon ground cumin

1 avocado, chopped

Juice of 1 medium lime or to taste

Salt and black pepper, to taste

shredded cheddar cheese or you can buy that mix cheese that is already shredded

Optional Toppings:

Chopped jalapenos
Sour cream
Chopped cilantro

 

DIRECTIONS:

In a large pot, heat the olive oil over high heat.

Add the onion and cook until tender they will be a little transparent, it only takes a few mins 3-5.

Add the garlic and cook 2-3 minutes. Give it a little stir.

Stir in the white beans, chickpeas, salsa verde, vegetable broth, cumin, chili powder, oregano, cilantro, and fresh lime juice.

Season with salt and black pepper, to taste.

Simmer chili on low for about 35-40 minutes or until the beans are tender. Put the chili into bowls and serve.  You can add other toppings to of your choice I like to add some fresh chopped jalapenos and extra salsa verde.  Squeeze a little extra lime on it and it will be one of your favorite dishes to make.
