These sugar cookies are so easy to make and easy to decorate. I bought those little sugar snowflakes n the middle. Even if you can’t bake you will be able to make these. You will need a snowflake cookie cutter.
Ingredients:
1 cup butter, softened (room temperature)
1 cup confectioners’ sugar
1 egg
1 teaspoon vanilla extract
1/2 to 1 teaspoon almond extract
2-1/2 cups all-purpose flour
1/2 teaspoon salt
ROYAL ICING:
2 pounds confectioners’ sugar
6 tablespoons meringue powder
3/4 cup warm water
White edible glitter and superfine sugar
Directions:
In a large bowl, add butter and confectioners’ sugar until light and fluffy
Beat in egg and extracts
Combine flour and salt, gradually add the flour and salt until it is smooth
Divide dough into fourths. Cover and refrigerate 1-2 hours or until it can be handled
Then preheat oven to 375°
On a lightly floured surface, roll out one portion to 1/8-in. thickness. (Refrigerate other portions until ready to use.)
Get your snowflake cookie cutter and tap it in flour so the dough does not stick and they fall out easier, cut out snowflakes
Carefully place the snowflakes 1 inch apart on ungreased baking sheets.
Bake medium and large snowflakes 6-1/2 to 7 minutes
Remove to wire racks to cool. Repeat with remaining dough.
For the Icing:
In a large bowl, combine confectioners’ sugar and meringue powder.
Add warm water; beat on low-speed 1 minute.
Beat on high 4-5 minutes
With white icing create snowflake designs. Let dry completely if you buy those sugar snowflakes place them on the icing in the middle before the icing dries. Do not press too hard or else they can break.
