Weekend Recipe: Beet Hummus

Beet Hummus is a nice twist on regular hummus.  It tastes delicious and the color is so pretty.  This is really easy to make and very healthy.  Hummus is a great snack for healthy living and weight loss. Beets help lower your blood pressure.  If you are a runner it will help lung capacity and it will also help you run faster and longer.  It applies to any type of workout.  It has nitrates that turn into nitric oxide that enhances your tolerance for exercise. Beets also help fight inflammation, so it protects internal organs and enhances their performance. Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Beets also contain the B vitamin folate, which helps reduce the risk of birth defects.


2 medium-sized beets
1 ¾ cups cooked chickpeas (soak beans overnight before cooking)
½ teaspoon (heaping) sea salt
3 tablespoons tahini (or to taste)
2 tablespoons lemon juice (or to taste)
2 tablespoons water


Place beets in a large pot of boiling salted water. Reduce heat to a simmer and cook until beets are tender when pierced with a knife, 15 to 20 minutes; drain and peel. Quarter beets and set aside.

Place beets and chickpeas in a food processor and pulse to combine. Add the salt, tahini, lemon, and water. Process the mixture for a full 2-3 minutes, or until the hummus is super creamy, stopping to scrape down the bowl now and then.

Serve with pita chips and enjoy!
